Blueberry Low-Fat Cheese-Cake Cups

Ingredients: (Serves 2)

  • 4 whole graham cracker squares

  • 8 oz. less fat cream cheese, softened

  • 1/3 Cup 0% Plain Greek yogurt

  • 2 T sugar

  • 1 tsp fresh squeezed lemon juice

  • 1 tsp vanilla

  • 1 Cup fresh blueberries (or to your liking)


  1. Turn graham crackers into crumbs. Either in a plastic bag and smashing them or with a food processor.

  2. Divide crumbs in half, then place ½ each into two dessert cups.

  3. In a mixer, combine the cream cheese, yogurt, sugar, lemon juice and vanilla. Mix until well blended and creamy.

  4. Divide mixture in half and place each half into two cups. Top with the blueberries and the remaining graham cracker crumbs.

  5. Refrigerate until served.
