1 Cup shredded Cheddar Cheese
½ Cup Shredded Swiss cheese
¼ Cup Mozzarella Cheese, shredded
2 T all-purpose flour, divided
1 Cup diced Ham
1 Cup (1/2 lb.) cooked, chopped bacon
1 (9 inch) pastry for pie crust
1 ¼ Cups half and half
5 Eggs, beaten
¼ Cup chopped Vidalia onion
6 oz. fresh spinach
¼ tsp salt, pepper
Preheat oven to 400 degrees.
Press pie pastry into the bottom of a 9-inch pie plate.
Bake pie crust in preheated oven for 10 minutes, until browned.
Reduce oven heat to 350 degrees.
Mix Cheddar cheese, Swiss cheese, mozzarella and 1 tablespoon flour in a bowl; (reserve 1 cup for the top) spread over the warm pie crust.
Spoon ham and bacon over the cheese mixture, and top with the spinach.
Mix half-and-half, eggs, onion, 1 tablespoon flour, salt and pepper together in a bowl.
Pour mixture carefully over top of the spinach, and top with remaining cheeses.
Bake in preheated oven until set in the center, 40 to 50 minutes.
Cool for 10 minutes before cutting.
