Italian Cold Green Bean Salad

Ingredients:

  • 1 ½ pounds fresh Italian style green beans, ends trimmed

  • 1 T salt

  • 8 T extra virgin olive oil

  • 4 T red wine vinegar, or to taste

  • 6 garlic cloves, each cut 3 or 4 into pieces

  • Black pepper


Directions:

  1. Bring a large pot of water to a boil over high heat.

  2. Add the beans and 2 T salt. Boil until the beans are tender, with no crunch, about 9 minutes.

  3. Drain in a colander, but do not rinse. Let the beans cool and air dry in the colander.

  4. Transfer the beans to a serving bowl and toss with the olive oil, vinegar, and garlic. Season to taste with salt and pepper.

  5. Let stand for 10 minutes or refrigerate overnight (I recommend this for fullest flavor). Taste and adjust seasoning as you like.
