Veggie and Ham Cold Salad

Ingredients:

  • 1 15 oz. can great northern beans or butter beans

  • 1 15 oz. can black pitted olives

  • Leftover corn on the cob kernels (2 cobs)

  • 1 cup cubed ham

  • 1 medium cucumber

  • 4 Roma tomatoes

  • 1/2 medium red onion

  • Salt, pepper

Home-made Apple Cider Vinegar Dressing:

  • 1/3 cup apple cider vinegar

  • 1/4 cup Extra Virgin Olive oil

  • 2 T sugar

  • Salt, pepper


Directions:

  1. Chop and Mix everything together in a large bowl.

  2. Whisk the dressing ingredients together and pour over veggies and ham in the bowl. Mix well.

  3. Cover and refrigerate for at least 2-3 hours or overnight.

Stir and Serve!
