Layered Veggie Casserole

Ingredients:

(All from the farm stand) Support your Farmers!

  • Onion (1 large)

  • Tomato (3)

  • Eggplant (1 medium)

  • Yellow Squash (1 large)

  • Zucchini (1 medium)

  • Shredded Mozzarella

  • 1 packet Italian Seasoning

  • Garlic Powder

  • Salt, pepper

(All sizes are approximate for an 8x8 pan) Want more veggies? Make a bigger pan!


Directions:

  1. Slice up your veggies, making sure they are all the same size so they bake evenly.

  2. Using a non-stick 8x8 pan, layer your veggies in rows. (In any order you choose!)

  3. Sprinkle the Italian Seasoning over all the rows. Season with the garlic powder, salt, and pepper.

  4. Sprinkle the mozzarella cheese over all the veggies.

  5. Bake in a 375-degree oven for 40-45 minutes. Or less or more depending on how firm you like your veggies! Test with a fork at 35 minutes in.

Top with parmesan cheese if desired.
