Oatmeal Butterscotch Chocolate Chip Cookies


  • 1 cup butter (two sticks), softened

  • 1/2 cup sugar

  • 1/2 cup packed brown sugar

  • 1 egg

  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1-1/2 cups quick-cooking oats

  • 1 cup sweetened shredded coconut

  • 1 Cup butterscotch chips

  • 1 Cup semi-sweet Chocolate chips


  1. Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture and mix well. Beat in oats and coconut. Stir in the butterscotch and chocolate chips.

  2. Scoop and place 2 inches apart on parchment lined baking sheets. Bake 10-12 minutes or until lightly browned.

  3. Remove to wire racks and let cool.
