Oatmeal Butterscotch Chocolate Chip Cookies
1 cup butter (two sticks), softened
1/2 cup sugar
1/2 cup packed brown sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups quick-cooking oats
1 cup sweetened shredded coconut
1 Cup butterscotch chips
1 Cup semi-sweet Chocolate chips
Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture and mix well. Beat in oats and coconut. Stir in the butterscotch and chocolate chips.
Scoop and place 2 inches apart on parchment lined baking sheets. Bake 10-12 minutes or until lightly browned.
Remove to wire racks and let cool.
