(Cookies)
Ingredients:
2 sticks butter
4 Jumbo Eggs
2 Cups sugar
6 Cups flour
4 tsp. baking powder (add to the flour)
1 tsp. almond, rum, lemon or vanilla (whichever flavor you like)
(I always make ½ batch with vanilla and the other ½ batch with almond)
Directions:
1. Cream the butter, eggs and sugar together in a mixer. Gradually add the flour/baking powder and mix together.
2. Refrigerate for at least 2 hours, or the day before. Roll out on a floured surface and use your favorite cookie cutters to cut out your shapes.
3. Bake at 350 degrees for 15 minutes. Let cool completely on racks and frost with the recipe below:
(Frosting)
Ingredients:
4 Cups confectioners’ sugar
½ cup shortening
5 T milk
1 tsp vanilla extract
Food coloring
Directions:
1. In a large bowl, cream together the confectioners’ sugar and shortening until smooth.
2. Gradually mix in the milk and vanilla with an electric mixer until smooth and stiff, about 5 minutes. Color with food coloring if desired.
