Oatmeal Creme Cookies

Ingredients:
Cookie:
4 Tsp. Melted Butter (make sure it is cooled)
3/4 Cup Brown Sugar
2 Eggs
1 Tsp. Vanilla Extract
3 Cups Quick Oats, Ground into Flour
1 Cup White Flour
1 tsp. Baking Soda
1/2 Cup White Sugar
1/4 tsp. Cinnamon
2 tsp. regular Molasses
1/2 Cup Vegetable Oil
Filling:
6 Tablespoons Softened Butter
1 1/2 Cups Fluff
1 Cup Confectioners Sugar
1/2 teaspoon Vanilla Extract
Directions:
Preheat your oven to 400 degrees F.
Grind the oats into flour using a food processor. Set Aside.
Combine all dry ingredients except for the oat flour.
Add the melted butter (cooled), eggs, vanilla, molasses, and vegetable oil. Stir well to combine.
Add in the oat flour and mix until well combined.
Scoop into 24 portions (approx. 1 inch in size) onto your baking sheets.
Flatten each scoop into round circles.
Bake for 5-7 minutes or until the sides crisp up brown.
Place on cooling racks and let completely cool.
Make your filling. Combine all the filling ingredients into your mixer and combine until you reach a nice creamy texture.
Once the cookies are fully cooled, frost 12 of them and then place the other twelve cookies on top to make cookie sandwiches. (Makes 24)
