One-Pot Pasta with Ricotta & Spinach
16 oz. box of Ziti or Rotini Pasta
1 8 oz. bag of fresh spinach
1 Cup Ricotta Cheese
1 Cup grated, fresh parmesan cheese
Cook the pasta according to package directions. During the last couple minutes of cooking time, add the spinach. Reserve 1/2 cup pasta water and set aside.
Drain the pasta and spinach in a colander.
To the same pot, add the ricotta, parmesan cheese, zest and juice of the whole lemon.
Season with salt and pepper and stir until combined.
Stir in 1/4 cup of the reserved pasta water until smooth. Add more pasta water if needed.
Add the pasta and spinach and toss until well coated.
Top with more parmesan cheese if desired.
