6 medium fresh zucchini, sliced in quarters (like fries)
1/2 Cup freshly grated parmesan cheese
1-2 Tablespoons of fresh rosemary & thyme, minced
Extra-Virgin Olive oil
salt & pepper to taste
Preheat oven to 350 F degrees. Place the sliced zucchini on a parchment lined baking sheet in rows.
Lightly brush the tops with the Olive oil.
Season with salt and pepper.
Mix the cheese and herbs together in a small bowl. Sprinkle over the zucchini.
Bake for 15-20 minutes until tender and the cheese is nice and melted.
