Parmesan Herb Zucchini Fries

Ingredients:

  • 6 medium fresh zucchini, sliced in quarters (like fries)

  • 1/2 Cup freshly grated parmesan cheese

  • 1-2 Tablespoons of fresh rosemary & thyme, minced

  • Extra-Virgin Olive oil

  • salt & pepper to taste

Directions:

  1. Preheat oven to 350 F degrees. Place the sliced zucchini on a parchment lined baking sheet in rows.

  2. Lightly brush the tops with the Olive oil.

  3. Season with salt and pepper.

  4. Mix the cheese and herbs together in a small bowl. Sprinkle over the zucchini.

  5. Bake for 15-20 minutes until tender and the cheese is nice and melted.
