Pasta Carbonara


  • 1 (16 oz.) package of fettuccini or spaghetti

  • 10 slices thick-cut bacon

  • 1 (16 oz.) package frozen sweet corn

  • 1 1/2 lbs. Feta Cheese, cubed

  • 1 large Vidalia or Red onion

  • Fresh Parmesan Cheese

  • salt, pepper

  • 1 T butter


  1. Cook the pasta until al-dente. Reserve 1 cup of pasta water, before draining.

  2. Cut the bacon into 1 inch chunks and slice the onion.

  3. Heat a large 12-inch skillet on medium-high and add the bacon. Cook 10-12 minutes, then add in the onions. Mix all together and cook until the onions are soft and the bacon is browned.

  4. Microwave the corn according to package directions. Add 1 Tablespoon butter and season with salt and pepper. Set aside.

  5. Add the drained pasta back to the pan. Mix in the bacon and onions mixture and the corn.

  6. Add the 1 cup of pasta water and mix all together.

  7. Add the Feta cheese cubes last and mix.

  8. Serve with fresh parmesan cheese on top if desired.
