1 (16 oz.) package of fettuccini or spaghetti
10 slices thick-cut bacon
1 (16 oz.) package frozen sweet corn
1 1/2 lbs. Feta Cheese, cubed
1 large Vidalia or Red onion
Fresh Parmesan Cheese
1 T butter
Cook the pasta until al-dente. Reserve 1 cup of pasta water, before draining.
Cut the bacon into 1 inch chunks and slice the onion.
Heat a large 12-inch skillet on medium-high and add the bacon. Cook 10-12 minutes, then add in the onions. Mix all together and cook until the onions are soft and the bacon is browned.
Microwave the corn according to package directions. Add 1 Tablespoon butter and season with salt and pepper. Set aside.
Add the drained pasta back to the pan. Mix in the bacon and onions mixture and the corn.
Add the 1 cup of pasta water and mix all together.
Add the Feta cheese cubes last and mix.
Serve with fresh parmesan cheese on top if desired.
