Pumpkin Spice Cake w/ Maple Buttercream Frosting

Ingredients:
1 cup granulated sugar
2 Large eggs
1 cup pumpkin puree (not pumpkin pie filling)
1/2 cup vegetable oil
2 teaspoons pumpkin pie spice
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Chopped Walnuts for topping if desired
Directions:
1. Preheat oven to 350F. Use a non-stick round cake pan, or grease and flour your pan.
2. To a large bowl, add the eggs, sugar, pumpkin, oil, pumpkin pie spice, and vanilla. Mix all to combine.
3. In a separate bowl, mix the flour, baking powder, baking soda, and salt.
4. Stir into the wet ingredients until just combined. Do not overmix.
5. Turn batter out into the prepared pan, smoothing the top lightly with a spatula.
6. Bake for about 35 to 40 minutes or until center is set and a toothpick inserted in the center comes out clean.
7. Cool completely on a rack. When cool, invert onto a plate, and frost with my maple buttercream frosting! Top with chopped walnuts if desired.
Here is the frosting recipe:
Ingredients:
1 cup butter softened
1/4 cup maple syrup
3 cups powdered sugar
1/4 cup heavy whipping cream
Directions:
Beat the butter on medium until light and fluffy. 1-2 minutes.
Add in the maple syrup and beat for another 30 seconds to 1 minute on medium, or until well combined.
Reduce the mixer speed to low and add in the powdered sugar 1/2 cup at a time.
Once all the powdered sugar is in, turn the mixer back up to medium high until the sugar is well-incorporated.
Pour in the heavy cream while the mixer is still running. Beat another 1-2 minutes longer, or until the buttercream is light, fluffy, and smooth.
