Roasted Garlic Cod Fillets

2 Cod Fillets (2 lbs.)

8 Roasted garlic cloves (pre-made)

2 Small White Onions, chopped

2 T Olive Oil

2 T butter

1 tsp fresh thyme

1 T Adobo Seasoning

¼ Cup White Wine


▪ Season the Cod fillets with the Adobo seasoning. (both sides) and set aside.

▪ In a large fry pan, add the olive oil and butter. Once melted stir in the roasted garlic cloves and the chopped onion. Stir until tender.

▪ Add the white wine and thyme. Simmer to reduce about 10 minutes.

▪ Add the cod fillets and cook until white and flaky. Approx. 5-6 minutes per side.

▪ Serve over rice with the additional juices from the fish. Or pair with my Zucchini Basil Balls.
