Spinach Salad

Ingredients:

  • 3 lbs. Spinach, washed, dried & chilled

  • 12 slices of bacon

  • 4 tsp brown sugar

  • ¾ Cup sliced onions

  • 1 tsp salt

  • 4 ½ T white vinegar

  • ¼ tsp dry mustard

  • 4 Hard-Boiled eggs

  • Dash of paprika


Directions:


1) Break apart or snip spinach with scissors into a salad bowl.

2) Cook bacon in skillet until crisp. Add sugar, onions, salt, vinegar, mustard and paprika. Bring to a boil and remove from heat.

3) Just before serving, pour hot dressing over the spinach and toss slightly until leaves are well coated.
