Spinach Souffle


  • 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry or

(2) 10 oz. packages fresh spinach, sauteed until just wilted. (I used fresh in this recipe)

  • 4 ounces cream cheese, cubed

  • 1 1/2 cups shredded Monterey jack cheese (or cheddar)

  • 4 large eggs, lightly beaten

  • 1/4 cup butter, melted and cooled

  • 3 garlic cloves. minced

  • salt, pepper

  • 1/4 Cup freshly grated parmesan cheese, plus additional


  1. Preheat oven to 350 degrees.

  2. In a large bowl, lightly beat the eggs and then add all the other ingredients.

  3. Transfer to a lightly greased 1 1/2 quart baking dish.

  4. Bake until the edges are lightly browned. Approx. 40-45 minutes.

  5. Sprinkle additional parmesan cheese on top if desired.
