2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry or
(2) 10 oz. packages fresh spinach, sauteed until just wilted. (I used fresh in this recipe)
4 ounces cream cheese, cubed
1 1/2 cups shredded Monterey jack cheese (or cheddar)
4 large eggs, lightly beaten
1/4 cup butter, melted and cooled
3 garlic cloves. minced
1/4 Cup freshly grated parmesan cheese, plus additional
Preheat oven to 350 degrees.
In a large bowl, lightly beat the eggs and then add all the other ingredients.
Transfer to a lightly greased 1 1/2 quart baking dish.
Bake until the edges are lightly browned. Approx. 40-45 minutes.
Sprinkle additional parmesan cheese on top if desired.
