Stuffed Mushroom Casserole

Ingredients:

  • 2 packages frozen chopped spinach, thawed and drained

  • 1 ½ lbs. ground beef

  • ½ C chopped green onions

  • 1 C sour cream

  • ½ C grated cheddar cheese

  • ½ C grated Monterey Jack cheese

  • ½ C grated parmesan cheese

  • ½ tsp salt, pepper

  • 1 T Italian Herbs Seasoning

  • 2 Lbs. Mushrooms (not too large of heads)


Directions:

  1. Sauté beef w/ salt, pepper and chopped onions.

  2. Remove stems and clean the mushrooms.

  3. Mix the sour cream and spinach together. Set aside.

  4. Place mushrooms cut side up in a large shallow casserole pan. Pour the beef and onions over the mushrooms, then cover with the spinach & sour cream mixture.

  5. Mix all the cheeses together and sprinkle all over the top.

  6. Cover and Bake at 350 degrees for 35-40 minutes.
