Zucchini Cheese Stuffed Fritters

3 Cups Zucchini (1 large), Shredded and drained
¾ Cup Parmesan cheese
½ Cup Cornstarch
Oil for frying
2 slices Cheddar Cheese
Shred the zucchini and squeeze all the moisture out. (I use paper towels and press onto the top of the zucchini over a colander).
Add oil to the frying pan, just enough to cover the bottom.
Combine the zucchini, eggs, parmesan cheese, cornstarch, salt and pepper until mixed thoroughly together.
Spoon 4 helpings into the pan and smooth out into squares.
Brown on both sides about 5-6 minutes each side.
Top two with a slice of cheddar cheese and place the other half on top until the cheese is melted.
Plate, Serve and Enjoy!
