Zucchini Cheese Stuffed Fritters

Ingredients:

  • 3 Cups Zucchini (1 large), Shredded and drained

  • 2 Eggs

  • ¾ Cup Parmesan cheese

  • ½ Cup Cornstarch

  • Salt, Pepper

  • Oil for frying

  • 2 slices Cheddar Cheese

Directions:

  1. Shred the zucchini and squeeze all the moisture out. (I use paper towels and press onto the top of the zucchini over a colander).

  2. Add oil to the frying pan, just enough to cover the bottom.

  3. Combine the zucchini, eggs, parmesan cheese, cornstarch, salt and pepper until mixed thoroughly together.

  4. Spoon 4 helpings into the pan and smooth out into squares.

  5. Brown on both sides about 5-6 minutes each side.

  6. Top two with a slice of cheddar cheese and place the other half on top until the cheese is melted.

Plate, Serve and Enjoy!
