Zucchini Pie


Ingredients:

• 4 cups zucchini, sliced thin

• 1 medium onion, chopped

• 4 eggs, beaten

• 1 cup buttermilk baking mix

• 1/2 cup canola oil or vegetable oil

• 3/4 cup grated Parmesan cheese, reserved

• 1 ½ Tablespoons chopped parsley, reserved

• Salt & ground black pepper to taste


Directions:

  1. Preheat oven to 350 degrees. Grease a 12-inch pie plate.

  2. In a large mixing bowl, combine sliced zucchini, onion, eggs, buttermilk baking mix, canola oil, ½ cup Parmesan cheese, 1 T parsley, salt & pepper; mix well.

  3. Spread the mix into the prepared baking dish.

  4. Top with the other ¼ cup reserved parmesan cheese and ½ T reserved parsley.

  5. Bake for 40-45 minutes, or until lightly brown.
