Braised Beef Italian Stew

3 lbs. Stew Beef Meat (Or Beef Country Style Ribs, cut into chunks)
1 red pepper, diced
1 yellow pepper, diced
1 medium yellow onion, diced
4 large red potatoes, diced
1 pkg. (10 oz.) frozen sweet corn
3 cloves garlic, minced
32 oz. Beef broth
1 Jar (6.7 oz.) grilled vegetable Pesto Sauce
(not the green pesto)
Place the meat in the crockpot first, followed by the diced vegetables and pesto sauce. Add the beef broth and stir vegetables only to mix up.
Set crockpot on low for 8 hours. Stir half-way through cooking time.
Serve over rice or noodles.
*note* You can thicken the stew with cornstarch (2 T + ¼ cup water), if desired.
