Ingredients:
4 Pieces wildly caught Salmon Fillets
1 small bag peeled, cooked small shrimp
2 Tablespoons olive oil
1 Tablespoon butter
2-3 Tablespoons Cajun seasoning
Salt, Pepper to taste
Mixed salad greens
Directions:
In a large skillet, add the olive oil and butter. Season (both sides) of the salmon fillets with the Cajun seasoning and salt and pepper. Sauté the salmon fillets in the olive oil and butter until almost cooked through. (About 3-4 minutes each side).
Add in the shrimp and sauté with the salmon until heated through.
Serve over a bed of salad greens.
To make Cajun seasoning: (makes about 1 ¼ cups) – Save for next recipe!
• 6 tablespoons paprika
• 1/4 cup kosher salt
• 2 tablespoons ground black pepper
• 2 tablespoons ground white pepper
• 2 tablespoons garlic powder
• 2 tablespoons onion powder
• 1 tablespoon dried thyme
• 1 tablespoon cayenne pepper
Mix all spices together and store in an air-tight container!
