Easy Corn Muffins


Ingredients:

  • 1 ¼ cups all-purpose flour

  • ¾ Cup Enriched corn meal

  • ¼ Cup sugar

  • 2 tsp. baking powder

  • ½ tsp salt

  • 1 Cup 1% Milk or skim milk

  • ¼ Cup Vegetable oil

  • 1 egg


Directions:

  1. Pre-heat oven to 400 degrees. Line a 12-cup muffin pan with paper liners or spray with non-stick cooking spray.

  2. Combine the dry ingredients.

  3. Stir in the milk, oil and egg. Mix until dry ingredients are moistened.

  4. Pour batter evenly into the muffin tins filling ¾ way full.

  5. Bake for 15-20 minutes or until golden brown.
