Easy Corn Muffins

Ingredients:

  • 1 1/2 Cups Yellow Corn Meal

  • 3/4 Cup All-purpose flour

  • 2/3 Cup sugar

  • 1 Tablespoon baking powder

  • 1 tsp. salt

  • 1 Cup Buttermilk

  • 1 large egg

  • 3 Tablespoons butter, melted

Directions:

  1. Pre-heat the oven to 400 degrees. Line a 12-cup muffin pan with paper liners or spray with non-stick cooking spray.

  2. Combine the dry ingredients.

  3. In a separate bowl, combine the buttermilk, egg and butter.

  4. Add the wet ingredients to the dry ingredients just until moistened.

  5. Pour the batter evenly into the muffin tins.

  6. Bake for 15-20 minutes or until golden brown.
