Irish Soda Bread

Ingredients:
3 1/2 cups of all purpose flour 2 Tablespoons caraway seeds (optional) 1 teaspoon baking soda 3/4 teaspoon salt 1 1/2 cups buttermilk
Directions: 1. Preheat oven to 425degrees. Lightly flour baking sheet. 2. Mix flour, caraway seeds, (if using), baking soda and salt in a large bowl. 3. Mix in enough buttermilk to form moist clumps. 4. Gather dough into a ball. Turn out onto lightly floured surface and knead just until dough holds together. 5. Shape dough into a 6 inch diameter x 2 inch high round. Place on prepared baking sheet. 6. Cut 1 inch deep X across top of bread, extending almost to edges. 7. Bake until bread is golden brown, about 30-35 minutes. 8. Transfer bread to rack and cool.
*Note - If you don't have any buttermilk on hand, make your own - Add 1 T Lemon Juice or White Vinegar into a one cup measuring cup and add Whole Milk to fill the one cup. Let sit for 10 minutes. (Makes one cup of buttermilk)
