Oatmeal Chocolate Candy Bar Cookies


  • 1 cup butter (two sticks), softened

  • 1/2 cup sugar

  • 1/2 cup packed brown sugar

  • 1 egg

  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1-1/2 cups quick-cooking oats

  • 1 cup sweetened shredded coconut

  • Bag of Hershey’s six pack candy bars (squares cut out)


  1. Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture and mix well. Beat in oats and coconut.

  2. Roll into 1-in. balls. Place 2 in. apart on parchment lined baking sheets. Bake 10-12 minutes or until lightly browned.

  3. Press a chocolate square into the center of each warm cookie.

  4. Remove to wire racks and let cool.
