Spam Fried Rice

Ingredients:
Jasmine or white Rice
2 T Extra Virgin Olive Oil
½ bunch green onions (scallions)
1 can Spam
3 large eggs
1 16 oz. bag Asian mixed frozen vegetables thawed (any variety)
3 T Hoisin Sauce
1 T Soy Sauce
2 garlic cloves, minced
salt, pepper
1 Cup pineapple chunks (optional)
Directions:
1) Prepare the rice according to package directions. Set aside.
2) Chop the spam into small cubes and thinly slice the scallions.
3) In a 12-inch non-stick skillet heat 2T oil on medium-high heat. Add the Spam, green onions, garlic, vegetables, sauce, salt and pepper. Cook 4-5 minutes until the vegetables are warm and the Spam is browned.
4) Add the Hoisin Sauce, Soy sauce and the rice and cook 3-5 minutes until heated through, stirring often. Make a center hole and stir in the eggs. Scramble the eggs in the center. When cooked, mix in with the rice.
5) Remove from heat and top with pineapple if desired.
