Chocolate Chip Shortbread Bar Cookies
2 Sticks butter softened (1 Cup)
¾ Cup granulated sugar
1 large egg
1 tsp vanilla extract
2 ¼ Cups All-Purpose flour
1 10 oz. package semi-sweet chocolate Mini Morsels, divided
Preheat oven to 350 degrees.
Beat the butter and sugar in a large mixing bowl until creamy. Beat in egg and vanilla extract. Gradually add in the flour and beat until combined.
Stir in 1 cup mini morsels. Press onto the bottom of a 13 x 9-inch baking pan lined with parchment paper.
Bake for 30 minutes or until top is just light brown. Immediately sprinkle the remaining chocolate mini morsels on the top. Let stand for 5 minutes and then spread evenly. Cool completely in the pan on a wire rack. Cut into 30 bars.
Store in an airtight container.
